Ellie went home to the Lord on April 14, 2019. Her beloved family was by her side. Ellie had a passion for life and was an inspiring friend to many people. She brought joy wherever she went and touched others’ lives with her fun-loving nature and contagious laughter. The bright sparkle in her eyes radiated the love she had for everyone.
Ellie graduated from La Jolla High School, attended USC, and graduated in 1984. She married Steve Folkman in 1986, and became the mother of their beloved children, Spencer (1990) and Tim (1991). After living in Atlanta and Seattle, the family moved to Lake Oswego where Ellie made many lifelong friends.
Ellie married Chris Hatzi in 2003 and together they made a home in Tualatin. Ellie always loved to feed people, and after catering for 20 years, Ellie decided to formalize her culinary skills. She graduated at the top of her class from Oregon Culinary Institute in 2007. After interning at the famed French Laundry Ellie and Chris opened The Olive and the Grape in 2008, a neighborhood restaurant in Lake Oswego.
In 2013, Ellie was diagnosed with Metastatic Breast Cancer. Over the next 5½ years, Ellie’s cancer journey became an expression of her renewed faith in Jesus Christ, serving others, and her love of travel. Ellie was baptized at River West Church in October 2014, sharing the truth of Jesus’ grace, faithfulness, and her salvation in her testimony. For several years, Ellie coordinated Sunday night hospitality at River West Church. She took pride in the responsibility as a labor of love. Ellie’s most passionate service involved mentoring women with late stage breast cancer and serving as a board member to Michelle’s Love, a non-profit dedicated to providing financial assistance for single women and men with cancer diagnoses. Ellie’s love of travel manifested itself through a 400-mile hike from Florence to Rome through the Apennine mountains (Via de Francisco) with her son Spencer, a bucket list trip to New York with her son Tim, an outdoor adventure to Banff with Shawn Engelberg and Patty O’Mara, and numerous trips to San Diego, the Oregon Coast, and Hawaii with Chris.
Next to Jesus, Ellie’s greatest love was for her boys, Spencer and Tim Folkman, husband Chris, and her beloved labradoodles Bella and Marley. For the entire week before Jesus called Ellie home, the family hosted a different themed party every night including Cinco de Mayo and 4th of July. Surrounded by family and friends, Ellie’s final week was one of food, wine, laughter, joy, love, and of course faith.
